Moms Recipe- Veg Briyani

Today after travelling from Andheri to Vashi, I realized that Mumbai would be the most difficult city to live in some years. As young mothers have to work, travel to office and also cook to impress their husband, it is easy to do a quick dinner . Being travelling in train and bus from many years, met some interesting people in the journey of daily commute. There is an aunty named Ajitha Menon residing in Sanpada with her two sons Siddharth Menonand Arjun Menon. Both sons are unique in their own creations of talent. Aunty wakes up 4.30am in the morning and makes food for her kids and returns back at 8.30 in night.  Travelling to Andheri and then coming and making food is something I really appreciate of her being women.

So this inspiring story leads to making food in shorter time which is the basic necessity for any mother, daughter, bahu or sister.

1 Carrot- julienne (long cuts)

4 to 5 French beans

1 Potato

3to 4 Cauliflower bunches

2 medium cups Basmati Rice- 300gm

100 gms Green Peas-1 small cup

2 Finely Sliced Onion

1 sliced Green Onion

2 Finely Sliced Green Chillies

Salt to taste

3 tbsp Pure Ghee

2 tbsp Dry Fruits (cashew nuts, raisin)

1/2 cup Yogurt (curd)

1/2 Cup Briyani Mix


1. Mix Curd and Briyani Mix to form a paste and keep it aside.

2. Wash the rice well before cooking. Add  3-3/4 cup water and a little salt cook it in pressure cooker or in a pan. Remove it from the pan and keep it aside for cooling.

3. Saute dry fruits in the ghee and keep it aside. Now saute both the onions till it gets brownish and keep aside.

4. Saute all vegetables and green peas for 4 to 5 mins in the ghee. Add mix curd with briyani mix and cook it for 2 mins and close the lid

5. Now add  the cooked rice and mix well with very light hands so that the rice grain doesn’t break. Cook for about 3 minutes.

6. Garnish with dry fruits and onions on top of it.

7. Serve the vegetable (veg ) biryani hot with raita and pickle.

Thats my sis you were talking about… she is a nut…she has a whole lot of talents tucked up her sleeve…. and some how manages to convince herself that she cannot do anything…. ask her for more recipes, she has a few unique creations of her own… ask her for an easy sambar recipe… its yummmmyyyy…. lotss more….

    Any way, kudos to you for this piece….. :))))) …. hope this sets her churning her creativity out …. :))))
